Most ovens are slow. They waste time heating up the air, which then has to heat the pizza. It’s a long road to a crispy crust. We do things differently. We use 800W shortwave infrared (IR) lamps. Instead of messing around with the air, these lamps dump energy straight into the dough and toppings. We’re talking about a jump from room temperature to 300°C in a matter of seconds. It’s almost instant.
The secret to that perfect char
Ever wonder how you get that professional, charred crust and bubbly cheese without turning the inside of the pizza into a cracker? It’s all in the waves. We use a tungsten filament wrapped in high-purity quartz to create shortwave radiation. These waves dive deeper into the food than the heat you get from a standard oven. Getting the setup right
We built these lamps to take a beating. The quartz is tough enough to handle the wild swing from cold to 300°C over and over again without cracking. But if you’re putting these into a commercial deck or a conveyor belt, you have to be smart about the layout. 800W in a small space is a lot of concentrated power. And please, don’t skip the reflectors. Use polished aluminum or gold-plated sheets to bounce those rays downward. If you don’t, you’re basically paying to heat the ceiling of your oven, which is a huge waste of electricity.
The reality check
Look, nothing is perfect. This kind of speed comes with a few trade-offs. Shortwave lamps don’t last as long as those chunky, old-school heating elements. Over time, the filament evaporates, and your wattage will dip. It’s just the nature of the beast. Also, because the heat hits so hard, your controller has to be on its toes. If your sensor is sluggish, you’ll burn your toppings before the system even realizes it needs to turn off. Stick with a fast-response K-type thermocouple. It keeps everything stable so you aren’t serving charcoal to your customers.
