Stop Waiting on Your Oven: Why Medium Wave IR Actually Works
Most convection ovens are basically just big boxes of hot air. The problem? Air is slow. It takes forever to move heat, and that lag kills your efficiency. We do things differently. We use medium wave infrared (MWIR) emitters. Instead of heating the air and hoping it reaches the dough, we shoot radiant energy straight into the product. It’s a massive jump—we’re talking 0 to 300°C in a matter of seconds. The secret is in the wavelength. Here’s the thing: bread dough is full of water and fats. MWIR is tuned to the exact frequency those ingredients love to absorb. Now, you might have tried short-wave lamps before, but those usually just sear the outside while the inside stays raw. MWIR actually gets deeper into the dough. To make this work without the bulbs exploding, we use high-purity quartz tubes. They can handle the thermal shock of jumping from cold to scorching hot over and over again. Getting it set up (the tricky part) If you want those lightning-fast response times, you’re pushing a lot of wattage into a very small space. You’ll need a power supply that won’t choke on the initial inrush of current. And a word of advice on the controllers: make sure your PID loops are tuned for speed. If your controller is sluggish, it’ll overshoot the target temperature. That’s how you end up with burnt crusts and wasted product. We also add special coatings to the quartz. This keeps the heat locked in that medium-wave range where it belongs. You can usually slide these into most industrial frames, but be careful with the sockets. The heat density is intense. Use high-temp ceramics, or you’ll be smelling melting wires pretty quickly. The trade-off Nothing is free. When you hit peak temperature this fast, it puts a lot of stress on the filament. If you just “hard-switch” the power on and off, you’re going to burn through your lamps way too fast. The fix? Use SCR (Silicon Controlled Rectifier) power controllers. They smooth out the voltage, which keeps the lamps happy and makes them last a lot longer. It’s a small tweak that saves you a lot of headache down the road.
